Jet Pilot

This is probably my most favorite tiki cocktail of all time, even over the Mai Tai.  This is my go-to drink at home when I am in that tiki mood. I find it to be far more flavorful and complex over the Zombie, which has very similar ingredients. While the Mai Tai is sweet, this is spicy. The cinnamon and absinthe play really well together in this cocktail.  My version varies a bit. I do not use 151 proof Demerara rum, I use the 86 proof Hamilton rum instead, and it is still deadly potent.

The earlier version named the Test Pilot was a simpler version of this. But during the Space Race this cocktail replaced it since it is more complex and just a better cocktail overall.

INGREDIENTS

  • 1 ounce Jamaican dark rum (Coruba)
  • 3/4 ounce Demerara rum (the original calls for 151 proof, I use 86 proof Hamilton)
  • 3/4 ounce Puerto Rican Gold rum
  • 1/2 ounce falernum (JD Taylor is what I use)
  • 1/2 ounce cinnamon syrup
  • 1/2 ounce white grapefruit juice (you might have to settle for ruby grapefruit juice)
  • 1/2 ounce lime juice
  • 1 dropper of absinthe or herb saint (about 5ml or 1/4 teaspoon)
  • 2-3 dashes Angostura Bitters

Add all ingredients to a mixing tin with crushed ice, or a cocktail shaker. Use a spindle blender if you have one, if not, just shake really hard for about 10 seconds.  Pour unstrained into a rocks glass. No garnish.
