Polynesian Punch

This gem I found in Beachbum Berr’s book, Taboo Table. While this book mostly focuses on food, it also has some cocktails, some of which can be used for entertaining.  While I was initially skeptical about the white creme de menthe, this odd ingredient really plays a very subtle but refreshing role along with the pineapple.  It is really perfect for a warm day outside for a backyard luau.

INGREDIENTS (Single serving)

  • 2 ounces Puerto Rican light rum
  •  3 ounces unsweetened pineapple juice
  • 2 ounces orange juice
  • 3/4 ounce lemon juice
  • 3/4 ounce sloe gin
  • 1/2 ounce coconut cream
  • 1/2 ounce white creme de menthe
  • 1 ounce club soda
