Special Reserve Daiquiri

The real attraction of this cocktail is the ice shell garnish, which is not easy to achieve. You need shaved ice and then push it upward so its sort of a canopy for the cocktail.  The ice shell is made by using shaved ice, forming it in the bottom of the coupe glass then putting it in the freezer for at least a half hour.  You then take it out, and allow it to melt a little at room temperature so you can push it upward with your fingers once the glass warms and it can slide.  Put it back in the freezer with the glass on its side and allow it to re-freeze.  It is not a fast or easy task, and if you plan to have it for guests, obviously you need to make them well in advance and save plenty of room in your freezer before serving these cocktails. Obviously, the longer you keep the glass in the freezer, the colder it will get, but also the longer the ice will keep its shape on the side of the glass before it slopes back down into the cocktail.

INGREDIENTS

  • 1.5 ounces aged Jamaican rum
  • 1/2 ounce lime juice
  • 1/4 ounce honey mix
  • 1/4 ounce falernum

Flash blend or shake with plenty of ice and double strain into a coupe with ice shell.
